Appreciate the note.  I was thinking of making Xmas sangria with some tomorrow.  Might have to actually drink it instead.  :P

Pulled a cork tonight.  Strong acetic acid nose, diminishing after 3-4 hours breathing.  Murky but bright color.  Fruit forward, not much middle or back.. Maybe 12-13% ABV?  I would like to revisit in another six months, maybe some of the particulate will deposit out.  Hellz, I will even duke theBadGuy  a Jackson for a bottle - and for the effort.

This is actually drinkable.  Popped about half an hour ago, into a carafe.  Still a bit thin, a bit acidic... but there's the beginnings of something pretty good here.  Gaining balance and a bit of weight.  Showing a lot of the zinfandel, with coloring and perfume a bit from the merlot.  The finish is beginning to persist and you can almost take away some chalk here.

In retrospect, I would've liked to have tasted the base wines separately before making the final blend % but as this thread shows, I was pretty lazy.  :P

Will try again in about six months or so.

Interesting.  I don't know that I'd duke 'em 60 beans to attend though will be interesting to see how this turns out.

My money's on Crushpad.

Rousanne, eh?  Odd choice.  It's a notoriously difficult varietal to work both in the vineyard and in the winery.

I used to love Crushpad when they were located in SF.  Them competing with "City Winery" is kind of a joke now, because they shut down their SF operations and moved to Napa - basically, they totally up and sold out.

Bottling will be on Sunday August 2nd at 2:00pm (4pm was already booked).

For info on the labels, go to their website www.makewinewithus.com. 2 labels are included, its $25 for each additional label. We can give them the info on what type of labels we want and what we would like written on them 2 weeks prior to bottling.

It's time. :wine:

Bottling runs from June 10th-August 9th. We should lock in a date/time now while they still have plenty of openings for our group. Available times are as follows:

Wednesday-Thursday at 2:00pm, 4:00pm and 8:00pm
Saturday-Sunday at 3:00pm, 4:00pm and 5:00pm

So far, Saturday June 27th is booked. They are closed July 3rd, 4th and 5th. I'm going to start up the pm chain again so we can get the momentum going on making a decision.

As a reminder, the facility's new address is:

Thanks for bumping this, guys- my summers are usually slower than other times of the year so I can *finally* put in a little manual labor on this.  Pretty much can be flexible to when you guys want to go.

Used oak barrels.

JCI: They moved to Wallington. My opinion - this was a good idea. When we first started we went there to pick the style of wine, then another time to crush grapes, then to put it into the barrels, etc. Each time we would bring bread, cheese, other things and drank our faces off. You can BYO and also you pretty much have access to an unlimited supply of wine there. High alcohol wine. This was all perfect when they were located on Newark Ave., right west of Little India... UNFORTUNATELY they moved to Wallington. Since then we haven't been to the location. I/we had plans to go every so often to sample the wine from the barrel or just hang out, but it's just not as convenient since they've moved.

So in summary it is a great idea but I wish it was still in JC to take advantage of it. Still, I can't wait to finally get my homemade wine.

So what do you guys think about this place? How was the experience, and the quality? I'm thinking of getting a small group of girlfriends together for this. And where exactly is this dang place? Everytime I drive on 1&9 by that giant carpet place under the skyway, I look over to my right to see if there are any signs.

Anybody interested in going to this:

Saturday, January 24th 11am-3pm.  Arrive anytime during these hours and join in the process, remember this is a working session so dress warm, wear waterproof shoes, and plan to have a great, educational time.
 
Notes: You will not be racking your own barrel because of the way the barrels are set up, also,because this is a work session there are no tables set up for eating.  No reservations are required and plan to spend as much or as little time as you like.

We will be crushing the grapes on Wednesday the 24th (sorry, I messed up the dates and mentioned previously that it was the 25th). We'll be meeting promptly at 8pm next week at the facility. If anyone else needs transport, let me know!

P.S... dress comfortably! Not that crushing the grapes will be a messy process, but you don't want to stain your sunday suit if you get splashed by juices, here me?

NEXT WEEK:

The next event will be the FOLLOWING WEDNESDAY 10/01 AT 8:00 pm. After that, our wine will sit for a while, so take advantage of the fun now :2thumbs:

Now, as difficult as it is to decide on a time slot that's convenient for everyone to crush the grapes, here are our options:

Tuesday 9/24 or Wednesday 9/25:

5:00 - 5:30pm
6:00 - 6:30
7:00 - 7:30
8:00 - 8:30

Saturday 9/27 or Sunday 9/28:

11:00 - 11:30am
12:00 - 12:30
1:00 - 1:30
2:00 - 2:30

Now, whatever day and time slot we choose for crushing the grapes will be our SAME MEETING DAY AND TIME ONE WEEK LATER for the pressing. After that, we won't have another event for a while unless its a special event held by the facility. Please be quick about responding, I'd like to take the spot that's best for everyone before someone else does.

Price per case = $152.50

We're putting in an order for a half barrel of OVZ/Merlot, which is 10 cases. They couldn't do just the 8 cases that I have counted so far, but I'm sure we'll wind up with a couple more people in our group anyway. The price on the half barrel is $1550-$1575 (she's emailing me the exact price). I'll be putting a $350 deposit down and I'm told the balance is due in the first week of September. So, PM me your phone numbers/emails so I can coordinate things.

Um, from the Make Wine With US FAQ page:

Q:  How much does it cost to make my own wine?
A:  The cost varies depending upon the varietal of grape that you choose and the quantity selected.  The quantity ranges from ¼ of a barrel (which yields 60 bottles of wine) up to a full barrel (which yields 250 bottles).  The average cost will range from $9.50 to $14.00 per bottle.


So, 1 barrel = 250 bottles (or 252 as the tourguide mentioned) = 21 cases at 12 bottles per case.

It'll be about $12-$14 per bottle. We can do a case per person (or per couple).  We only need a handful of people, but I'm hoping we have more. I take it the OVZ/Merlot is the winner. It's been so long since we've discussed this that it admittedly sort of slipped my mind. What are the details again, i.e. how many people do we need, how much per person, etc? I think I originally committed to two cases but would likely only do one, given my very limited space at home.

I have nothing against merlot as long as it Petrus.

Recently had a good 100% merlot from Italy - a 2000 Petrolo Galatrona.

DS - she actually did quote Sideways when she was talking to us about the wines, but it wasn't the classic about the merlot.  I actually asked pinky if I should throw out that quote when she brought up merlot, but I hadn't had enough tastings yet at that point to do so.

Not sure what you mean about throwing in other types...  I am happy to buy two cases of the OVZ/Merlot, but I'm extremely hesitant to buy anything I haven't tasted first.  Especially a case of it.

Keep in mind that 2 cases = 12 bottles of wine, not 24 (there's 6 bottles per case - it ain't beer, yo). We're in for 4 cases.

Understandable a man with Champagne tastes would confuse this.

We could bottle some 375s.  My pref is the hard to find 50 cl which is just right for 2 people, and the full litre for four.  A 750ml just don't get it done between 2 couples.

Irregardlessly, we can do what we want - even go with plastic corks!!

I propose a(nother) get together, everybody bring a varietal.   If we're gonna make 50 gallons, we should go safe and sure, with a varietal/blend most agreeable/least offensive.

Varietal - Merlot, grenache or syrah
Blend - Bordeaux/meritage type

I still have lotsa questions, but most are way out ahead of where we are for now.  So I propose we get some $10 bottles and play around with some food to see what we might like, and then rent a barrel and make some plonck.

We liked the OVZ/Merlot and OVZ too – very drinkable right out of the barrel. Which leads me to a question: would further bottle-aging lessen the admittedly distasteful smell of the Chianti and/or Super Tuscan? Because the taste was promising.

We're in for a case or two.

I liked the zin blend the best, and then the other four about the same.  The others I wasn't thrilled with and probably wouldn't buy.  I'd probably get 2 cases.

The wine tasting yesterday was a lot of fun. The space is really neat, and you would never know it was there. It would be a great venue for a private party or event, which they do. When we were there there were a couple of families bottling their wine. They brought a ton of food and were just having a good time.

Here are the wines we tasted, in order from my favorite to least favorite:

1. Old Vine Zin/Merlot blend
2. Old Vine Zin
3. Chardonnay (I know the concensus seems to be red, but I really liked the chard)
4. Merlot
5. Cabernet Sauvignon
6. Bordeaux blend
7. Chianti (smelled like poo)
8. Super Tuscan (smelled like rotten poo)

Be interested in seeing everyone else's thoughts. We are thinking that first we figure out how much wine everyone is in for, then determine how many barrels or 1/2 barrels and what grapes. I am in for 2 cases.

No one has to bring any money with them tomorrow. We'll be touring, tasting, etc. Once we have a final headcount & decide which type of wine(s), we'll submit the payment in full for our group (at some point prior to them ordering our grapes in August).

Here are the grape options:

Red Grapes

Barbera

Semi-classic grape commonly grown in the Piedmont region and most of northern Italy; was probably imported into the U.S.A. late in the 19th century. Usually produces an intense red wine with deep color, low tannins and high acid and is used in California to provide "backbone" for so-called "jug" wines. Plantings in North America are mostly confined to the warm western coastal regions.

Brunello

The Sangiovese Grosso clone Brunello  isolated in the mid 19th century in Montclair, Tuscany. Variety is used for the dark red, traditionally powerful and slow-maturing "Brunello di Montalcino" wine. If you like a darker wine, we suggest you blend with Petite Sirah or Syrah. Longer aging produces a much softer & smoother wine. A good choice as a Reserve Wine.

Cabernet Franc

Bordeaux wines commonly contain a blend of both Cabernet varietals wines as well as Merlot, a practice increasingly being followed in California and elsewhere. Wine from these grapes can be fermented to many varietals styles, drunk young or aged, having a deep purple color and herbaceous aroma when young. As with Cabernet Sauvignon, growth in North American is mainly confined to the cooler coastal regions; the U.S. Northeast and the Pacific Northwest proving to have hospitable climates. New Zealand has also shown itself to be a potential good home.

Cabernet Sauvignon

A "noble" grape famous as one of the main varieties, along with Merlot, Cabernet Franc and others used to create the magnificent French Bordeaux region blended red wines. This varietal grape produces a dry red wine. Aromas and flavors include: Black-currant, blackberry, mint (etc).

Merlot

Classic grape widely grown in the Bordeaux region of France and elsewhere.  The red wine bears a resemblance to Cabernet Sauvignon wine, with which it is sometimes blended, but is usually not so intense, with softer tannins.

Petite Sirah

They produce dark red, tannic wines in the warmer regions of California, used mainly as backbone for Central Valley "jug" wines. In the cooler northern regions, where many very old vines still exist, it is often made into a robust, balanced red wine of considerable popularity.

Pinot Noir

The premier grape "cépage" of the Burgundy region of France, producing a red wine that is lighter in color than the Bordeaux reds (such as the Cabernet's or Merlot). Cherished aromas and flavors often detected in varietal wines include cherry, mint, raspberry, truffles and the ubiquitous gamey odor in new wines often referred to as "animalé" by the French winemaker.

Ruby Cabernet

Red-wine grape cross originating from Carignan and Cabernet Sauvignon parentage. Bred for use in the hot San Joaquin Valley region of California. Produces a dry, deep red fruity table wine that is perfect for meals with red meat.

Sangiovese

Used to produce the Chianti and other Tuscan red wines. Produces medium-bodied reds with rich cherry or plum like flavors and aromas. The California grape has been lighter in color and harder to make. We suggest t blending with Zinfandel or Cabernet.

Syrah

A grape variety associated with the Rhone Valley region of France, makes full-bodied tannin red wine. Make it straight or use it in a blend.

Old Vine Zinfandel

50 year old vines, grown in California and used to produce robust red wine as well as very popular "blush wines" called "white Zinfandel". Zinfandel is noted for the fruit-laden, berry-like aroma and prickly taste characteristics in its red version and pleasant strawberry reminders when made into a "blush" wine


White Grapes

Chardonnay

Yields a full-bodied, moderately acidic, dry austere wine possessing a fruity character (e.g.: Apple, lemon, citrus) subsequent barrel-influenced flavors include "oak", "vanilla", and malolactic fermentation imparted "creamy- buttery" components.

Chenin Blanc

Although naturally a hard, acidic grape slow to mature, is made into fine sweet wines that age well in the bottle. In the U.S. the grape all too often ends up in the generic jug wines of bulk producers as acidity enhancer for otherwise flabby high sugar/alcohol blends.

Pinot Grigio

French for "gray” refers to grayish hue of the grape. The variety can create crisp, dry wines with good acid "bite".

Sauvignon Blanc

Shows a tendency towards a grassy, herbaceous flavor in the grapewine, often referred to by professional tasters as "gooseberry".

I'm going to get a grape list. Those of us that cannot make it to a tasting should seriously go there on the 7th. If not, simply pick a type of wine off the list based on your particular tastes. We'll figure it out from there. I'll post it here once I have it.

Weekends seem to be difficult. On the 7th, there is still the tasting from 2-5 pm. Its open to the public. I recommend it to anyone who wants to participate, but has a tight upcoming schedule. I'm told the price per bottle comes out to be about 10 to 11 bucks, depending on the type of grape (Pinot Noir will obviously be higher than Syrah, for example). We can make as much or as little as we want. We make it, bottle it, name it & label it (oh, and then DRINK IT at your favorite BYOB restaurant). Anyone who knows their wine, but can't make it to a tasting....just pick what you want to make and let me know. It'll come down to a vote.

Now.....what does everyone think about Thursday the 19th at 7pm (if I can schedule that time). Friday night is no good. jc_insom, we'll get you in there, don't worry! +1 on the Indian Food, RB!

I suggest we make at least two different types (half barrel of one, half barrel of another). The prices should come out to be between $11-12 per bottle, depending on what kind. Ag and I did this together and will have a ton of bottles by August this year. Our wine is being made in West Paterson, much less fun than the JC establishment. When I went to taste already made wine to figure out the grapes I was going to order, the wine was DELICIOUS.  It is a ton of fun in JC because they plan regular events for members and not only do we try our wine but we can try the wine of other bottlers! This would be fun to get more than two people involved! Big wine making parties! Yay!

Once I get an idea of how many people want in, I'll get a group pricing schedule. All in all, it'll come down to how much wine we decide we want to make/bottle/take home

Unfortunately, I do not have the room/proper storage in my apartment to store too many cases, so I can't commit to too many cases.

If we get a good group together, each person owning equal "shares" in a barrel or two (or three), we could have a great time making wine at Make Wine with US on Newark Ave. Not only would we be making the wine, we'd meet every so often at the facility to sample it as it ages, enjoy dinner parties & events, etc etc etc. With enough group memebers, we'll be able to choose various grapes instead of just one type (at a much more reasonable price). All in all, we'd have a lot more fun, too. Hollah at me, WiredJCers. Anybody up for it? Give the above site a look-see and post a positive response if your interested.
